We aim to produce an EVOO that meets very specific standards: an optimal lipid profile (high in monounsaturated fats like oleic acid), rich in tocopherols (especially vitamin E), and with a remarkable content of phenolic compounds (biophenols and polyphenols), known for their antioxidant and anti-inflammatory effects.
To achieve this, we only use olives from trees grown in mountain areas, harvested early, cold-pressed immediately, and managed with farming practices that encourage the natural production of phenolic compounds.
